Description

Delicate, fruity and sophisticated, we like to think of Linden as the Chardonnay of the honey world. It has a butter-yellow colour, a distinctive, mildly spicy flavour and a fresh, woody scent. Ours comes from the Codri forest region of Moldova, where Linden trees have been grown for honey since Medieval times. Tall and elegant, their white flowers bloom from late spring-time to early summer, when the groves come alive with the hum of honeybees.

Tasting Notes

Linden Honey crystallises naturally after four-six months, forming a soft, buttery paste with large crystals.

Pairing

Linden’s tangy taste makes it the perfect match for creamy cheeses, green melon and crusty baguettes. It also goes nicely with a rich Malbec wine.

Benefits

Historical documentation connects linden nectar honey with treating respiratory and inflammatory conditions, though more modern evidence stems from the honey’s phytochemical profile and antibacterial properties. A 2025 comparative analysis of balkanik linden honey samples (2023 harvest) assessed antioxidant potential via assays such as TPC (total phenolic content), DPPH, CUPRAC, FRAP, ABTS, and ORAC. The study showed notable antioxidant activity, especially in samples from regions richer in linden pollen.

While direct studies on honey’s sedative effect are limited, research into the related Tilia plant attributes flavonoids (notably quercetin) as having anxiolytic and sleep-promoting properties, increasing sleep time by ~50 minutes in animal models
